This is something we pay close attention to at Aurum Lounge. We do not present Champagne in isolation. Every tasting is accompanied by carefully matched tapas — dishes that draw on the culinary traditions of Mallorca and the Mediterranean — and Famille Collet's wines are among those that genuinely transform in the presence of good food. A Champagne with real body and vinous character behaves differently alongside a plate of aged Manchego or a dish built around the island's own olive oil and cured meats. It opens.
